black bean and zucchini burgers

so... i know i've been absent for a couple of months... and there is no excuse except for pure laziness and a lack of motivation... you see, when the hubby is out on patrol, i sometimes fall in a funk of simple dinners that i know my two little guys will eat... but that is all over now... it's a new year, and i've gotten my motivation back, and i'm pretty sure i'm not going anywhere for a long time :)
so lets start the new year with a healthy and delicious dish... black bean and zucchini burgers... it's such a simple recipe, made with a few ingredients... and... it's healthy for you too...
ingredients:
1 (15-ounce) can black beans, rinsed and drained
1 egg
1/2 yellow onion, chopped
1/4 cup chopped zucchini or summer squash
1 cup whole wheat bread crumbs
1 heaping tbsp of fresh chopped cilantro
1/2 teaspoon minced garlic
salt, pepper and cumin to taste
hot sauce (or red pepper flakes) to taste

directions:
1. place all ingredients (except about a 1/4 cup of the black beans) into a food processor and pulse to combine, then add in the remaining whole black beans... then shape into patties
2. heat oil in a large skillet on medium heat... arrange patties in a single layer (working in batches, if needed) and cook, flipping once, until golden brown on both sides and cooked through, about 10 minutes total
3. top with anything you wish... we topped ours with shredded colby jack cheese, fresh pico de gallo, guacamole and a bit more fresh cilantro...
look at those babies fry.... mmmm....

the only change i will make will be to use a heartier bun... ciabatta or a nice whole wheat bunky roll... and maybe some pepper jack cheese... otherwise this was amazing...
